These are all of the books that I've found to be either extremely informative or inspirational.  They are listed in no particular order and cover many genres.  If you are interested in inspirational books, you might be interested in a list of what the polls say are the most inspirational books ever written.
 

Zen and the Art of Motorcycle Maintenance by Robert Pirsig

I would describe this book as the most inspirational book that I have ever read.  It is a philsophical book written in a manner that is interesting to read and changes the way you look at the world.  Although it can be very challenging to read as a lot of thinking is required to fully understand the concepts that are being presented, the effort put into understanding the book is well worth it.
 

Emotional Intelligence by Daniel Goleman

This book is a great read into figuring out how the mind works.  It explains how and why people react to emotions in terms of parts of the brain and chemical processes.  Goleman stresses the importance of interpreting the emotions of yourself and others, how IQ does not do this and why emotional intelligence might be able to determine how successful a person might become.
 

Brief History of Time by Stephen Hawking

If you are interested in crazy physics this is a great place to get a brief overview of the current scientific theories.  That pretty much sums it up as this will either greatly appeal to you or it won't.
 

Body for Life by Bill Phillips and Michael D'Orso

This book describes how to get in shape quickly without spending endless hours in the gym.  I have heard of many people rapidly losing a lot of fat (25 lbs in 12 weeks is not uncommon) while gaining strength while following this program.  The workouts are short, no starving is involved and pigging out once a week is essential to acheive success on this program.  The book is motivational (it almost tries too hard though) and well written.  I recommend this book to all my friends who want to get in shape as I have personally seen excellent results on this program.
 

The Wealthy Barber by David Chilton

Unless you like living off the land and have no need for money, a basic understanding of financial thingies is fairly important.  This book is an easy way to get a basic understanding of how to easily and painlessly invest money so that you will not have to worry about finances in the future.   Personally, I'm not too fond about thinking about my money (or lack of it) very often and this book provides a way of dealing with money in a manner that allows you to almost forget about your money.  I think people that follow most of the suggestions in this book will feel financially secure for the rest of their lives.
 

Breakthrough on Skis by Lito Tejada-Flores

This is the best learn-to-ski book I've come across.  It's so informative and well written that it deserves much more recognition that it gets.  It's written for beginner/intermediate skiers who would like to master moguls, ice, powder and extreme skiing with the same grace as expert skiers.  Not only does it cover all of the possible terrains to ski on, it is written in such a manner that makes it very easy to visualize what to do on your skis (almost to the point where you feel that you can ski better after simply reading the book).  If anybody can recommend a book that is similar to this one relating to snowboarding, I will be eternally grateful.
